Bracelets

Sometime in July our county had their annual Relay for Life celebration. My family went and supported the cause, my mother in law, who reports everything for our county to the paper and the local teams. The cattlemen grilled ribeye steak sandwiches (you know you're from a small town if you've ever enjoyed one of these) and there were root beer floats being made by another group. (Before we were married, Al took me to a nearby town's celebration and offered me a ribeye sandwich and I said, no thanks. Then proceeded to finish his sandwich off. It must have been love!! They are the absolute best things ever!!) There was a silent auction where I bid and "won" two weekend kayak rentals, hence the previous post of floating down the river!

Anyways, my point here is, while we were making laps around the track looking at the luminaries of victims and survivors, some young girls sold me the purple bracelet above that says Hope in support of cancer research. Casey loves it and won't let me take it off. He found one at home, on the floor I'm sure, that has a car on it and he wears his all the time!! If he doesn't see me with mine, he asks where it is and looks until he sees it. He also checks to make sure his is still on his arm. Sleeps in it and everything. Enough people had commented on his bracelet that I thought I should document this precious moment.

So if you see Casey with his bracelet on, know that Mom has hers on too and she's not too far behind...

Bat Update

So, today I was home because Al and I decided that he would take a couple hours off of work and we'd take another trip down the river since we had the kayaks until 6:00 p.m. tonight. Casey and I were swinging and hanging up laundry deciding to come in to have something to eat. While we were eating bacon,

ANOTHER BAT FLEW AT ME
IN MY VERY OWN KITCHEN!!!!!!!!!!!!!!!!!!!!

I again begged my neighbor to come to my rescue. He did, but got bit in the process and we decided to mark this bat to see if it came back again. UGH. He then looked around our house and maybe found an entry spot, so Al WILL be fixing that when he gets home tonight!!!

I hope you know it is morbid fascination at this point that makes me keep taking pictures. That and the fact that I can blog about it! *smile* Anyway, my neighbor had this great idea to "mark" the bat, just in case it came back in our house yet again!!! So here we are putting paint on its wing!! Yeah, he, he, we are Iowa State University Scientists marking bats now and observing their natural habitats. Ha. Ha.

Floatin' Down River

Sunday we had the opportunity to go boating, tubing, kayaking down the Cedar River with some good friends. Beth was brave enough to bring a camera along so I get to share all these wonderful pictures!! Thanks Beth!! And if you want to see more of our wonderful trip, check out her blog. Alas, there aren't any pictures of "Queen Beth" sitting on her chair in their blue boat! She had the camera and I didn't think to snatch it!! Next time...(because we all know I won't be brave enough to try and kayak with Casey on my lap and take pictures!)

The kayaks were free rentals that I acquired at Relay for Life and they were a blast!! Bigger than I expected and very easy to manuever!

Beth's men were trying so hard to fish, stopping to get bait and everything!!
Too bad they didn't catch any this trip! But that means we should do it again!! Don't you think, Beth?
Despite not having a motor, Al was relaxed and enjoying our time...

We ended up being on the river around 4 hours! A good time was had by all!

AAAAARRRRRGGGGGHHHHHH!!!!

I stopped home unexpectedly after taking the kids to school and this flew at me and hit me in the face!! AAAARRRRGGGHHHH!!! Al was at work and his Dad was busy so I begged a neighbor to come and "save" me from this creature!! Then, he indulged me by holding him and letting me take a picture for the blog!! Look at those teeth!!!

AAAARRRRRGGGHHHH!!!! Happy Monday, huh!

One of my favorite parts of camping...

I've talked about how I like to cook in my Dutch ovens? And I'm always trying new things...Well, this past winter Al and I went to the RV show in a larger town close to us and I bought a new, bigger Dutch oven!!! It's a Lodge and it is awesome! The man who sold it to me owns the local outdoor store in our town. He told me if I bought a Dutch oven he'd share his favorite recipe with me. He did and a couple of weekends ago was the first time I was able to try it.

Oh my goodness! It has to be my new all time favorite Dutch Oven recipes!! Yum, yum, yum!! Did I say yum??

I thought I'd share it since it doesn't have to be made in a Dutch oven; it can be made in a regular oven, too. There's just something about a campfire that adds to it.

Here goes, try it and see if it becomes one of your favs too!!!

Cheesy Chicken Italian-o

1 lb. bacon 1/4 cup honey
8 chicken breasts; cut into chunks 2 tsp. ground oregano
3 cloves garlic; minced 2 tsp. basil
1 large yellow onion; sliced 1 1/2 tsp. parsley
6 large tomatoes; diced 1 tsp. salt
1 red bell pepper; cut into chunks 1 tsp. ground black pepper
1 green bell pepper; cut into chunks 3 cups Mozzarella cheese; grated
1 cup mushrooms; sliced 3 cups Cheddar cheese; grated
(1) 10 3/4 oz. can tomato puree 1/2 cup Parmesan cheese; grated
1/4 cup balsamic vinegar

Heat a 12" Dutch oven using 20-22 briquettes bottom. Slice bacon into 1" strips then add to hot oven and fry until brown. Remove bacon from oven. Remove and reserve all but 2 Tbs. of the bacon grease from the oven. Add chicken and garlic to oven and cook, turning frequently, until juices run clear when chicken is pierced with a fork. Remove chicken from oven and add reserved bacon grease. Line the bottom of the oven with onion slices then put chicken on top of the onion. Add tomatoes, red and green bell pepper, and mushrooms. Cover and bake using 12 briquettes bottom and 12-14 briquettes top for 30 minutes.

In a large measuring cup make a sauce with the tomato puree, balsamic vinegar, honey, oregano, basil, parsley, salt, and pepper. Stir to mix well. Sprinkle bacon over top of cooked vegetables then pour sauce over vegetables. Cover and bake another 15 minutes. Sprinkle cheeses over the top. Replace lid and let sit for 15 minutes until cheese is melted.

I Spy Saturday 2...

I Spy Saturday...

Okay, so I realize my mistake...I asked you all to post a picture and or comment about Iowa and you are not all from Iowa or have any real opions about Iowa. I realize that now. My husband has helped me to see the errors of my ways... Sorry....

Today, I'd like you to post a picture and comment about family.

Now family could me your immediate family, spouse and or children; or it could mean extended family aunts, uncles, cousins; or it could mean church family; or it could mean pets...the list is endless.

My picture isn't even one that I took, however I did edit it a bit...
This is my niece and I think this picture perfectly personifies her. She is a fashion concious, fun-loving little girl who knows what she wants. Who are you thinking about today?

Now go on and post a picture and tell me about your family.
